BLUEBERRY CHIA SEED PUDDING

– 1.5 cups (360 g) lite coconut milk or milk of choice – 1/2 cup (70 g) frozen wild blueberries

INGREDIENTS

– 1-2 Tbsp (30 g) maple syrup (more to taste) – 1 Tbsp lemon zest (from one organic lemon) – 1 Tbsp fresh lemon juice – 1/3 cup (60 g) chia seed

DIRECTIONS

To begin, use a blender to produce a smooth mixture of all of the ingredients, with the exception of the chia seeds.  

You can now taste the mixture and make adjustments to the components, such as adding additional sweetness or lemon juice, for example.  

After the blueberry milk combination has been transferred to a bowl or jar, thoroughly incorporate the chia seeds into the mixture.  

The chia pudding should be allowed to rest for five minutes, after which it should be stirred once more before being covered and placed in the refrigerator for at least thirty minutes  

Enjoy the blueberry chia seed pudding that you have prepared by serving it in jars or bowls, topped with dairy-free yogurt and fresh blueberries, or any other toppings of your choosing.
