During Chinese New Year, we prepare a variety of traditional foods to share. Meat dishes such as roast pork, boiling chicken, steam fish, roast duck, and prawns are frequently served as centerpieces.
While there will be vegetarian options, they will not be the primary focus. So, to deviate from the norm, I set out to design a vegetarian dish that would take center stage.
Using the classic san choy bow as inspiration, I combined water chestnuts, mushrooms, and firm tofu with a sweet savoury kecap manis sauce,
then placed on top of crunchy fresh baby cos lettuce to make my own wonderful Asian vegan lettuce wraps.
